I was reading your post over at “habit” about the egg supply situation. When we have an abundance of eggs, fresh homemade pasta is the way to use them up for us. There is a recipe for my bread machine that uses 5 eggs! The bread machine does all the work, and I roll it out in a pasta machine. You can roll it out by hand, and cut the pasta dough with a knife if you don’t have a machine.
